Method
In a large bowl combine all the marinade ingredients together and stir well.
Pound the chicken thighs until about 1cm thick.
Coat the chicken thighs well in the marinade and refrigerate for at least 1 hour.
Preheat the oven to Gas 6/200°C.
Chop the fresh herbs and place in a bowl with the other tzatziki Ingredients, mix well and refrigerate.
Skewer the marinated chicken thighs individually rotating each one 90 degrees. On a baking sheet use half of the onion as a base and position the skewer vertically like a spit.
Bake for 11⁄2 - 2 hours until a core temperature of 75°C is reached.
Let cool for 10 mins and slice. Fill the pittas with chicken and top with slices of tomato, onion and tzatziki sauce.
