     Method
 Oil and line a cake tin.
 Mix flour, cocoa, baking powder, bicarb, sugar and salt in a bowl. Break up any lumps with your fingers.
 Mix buttermilk, oil, vanilla and food colour with 100ml of water. Add the eggs and whisk until smooth.
 Combine the wet and the dry ingredients together. If the cake isn’t red enough add a bit more extract. The cake will darken when cooked.
 Pour the mix in to the tins and bake for 25-30 minutes. Gas 4/180°C.
 Turn onto a wire rack to cool.
 For the icing put the butter in a large bowl and sieve in half the icing sugar. Add the soft cheese, vanilla and remaining icing sugar. Mix well to ensure no lumps.
 Spread the frosting on top of the cake and cut in to squares and serve.
