                      Method
 Place sponge mix into mixer bowl, make up as per manufacturer’s instructions, beat for 3 minutes.
 Add grated orange zest and vanilla essence, mix in.
 Add in fruit of choice and mix gently.
 Place into a greased baking tin and cook for 30 minutes or until set and golden brown. Gas 4/180°C
 When cool, remove from the tin and drizzle the icing across the top.
