Method
Heat the sugar, golden syrup and butter until melted.
Mix the spices and flour in a large bowl.
Dissolve the bicarbonate of soda in 1tsp of cold water.
Make a well in the centre of the dry ingredients and add the melted sugar mix, egg and bicarbonate of soda. Mix well.
Wrap the mix in cling film and refrigerate for at least 1 hour until firm enough to roll out.
Heat the oven to Gas 3/170°C.
Knead the dough lightly and roll on to a floured surface. Thinly roll out half of the dough and cut into Christmas shapes.
Bake for 12-15 minutes until lightly golden.
When completely cooled decorate with white chocolate and sprinkles.
The dough can be made in advance and keep for up to a week in the fridge.
