Method
Line a 2 lb loaf tin with greaseproof paper. Heat the oven to Gas 4/180°C.
Wash, peel and dice the onion. Wash the mushrooms.
Heat the oil in a pan and soften the onions. Add the Quorn pieces, garlic and sage and cook for a further 3 minutes then add the mushrooms and stock, simmer for a further 5 minutes then leave to cool slightly.
Place half the mixture into a bowl and blend, with a stick blender, for 1 minute - add the mix back to the pan and add the breadcrumbs, chestnuts, cranberries and seasoning.
Press the mixture into the loaf tin and press firmly.
Cover with greaseproof and bake for 30 minutes. Remove the greaseproof and bake for a further 20 minutes.
Rest for 10 minutes before serving.
