Method
Soak the raisins and currents in the cranberry juice for 1 hour, Drain then set the liquid aside.
Wash, peel and grate the apple.
Mix all the ingredients well in a bowl. Cover and refrigerate for at least 1 hour for the flavours to combine.
Heat the oven to Gas 4/180°C.
Using a round cutter cut 36 rounds for bases and pride in to a muffin tin.
Spoon approx 2 tea spoons of mix in to each base.
Cut 36 rounds or stars to fit on the top. Brush the edges with egg and place a top on to each pie. Egg wash the tops.
Bake for 20 mins until golden brown.
Sprinkle with castor sugar or dust with icing sugar before serving.
