Significance

It is a measure of the degree of un-saturation center of FA moiety of
   glycerides,

so it is useful for identifying the oil as DRYING (125 – 200),
SEMIDRYING (80 – 140),
NONDRYING (<80)

         The greater the degree of unsaturation, the higher
           the IV, the greater the liability of oil or fat to go
           rancid by oxidation
