5. Family Style
a-Family-style service, or modified family-style service with staff assistance, is common in special care services for residents with dementia, and in group home environments for residents with disabilities. This increasingly popular style of service supports the rituals of dining at home.
b-Residents may require significant assistance with passing and dishing their dining choices. Staff assistance can assure a smooth process and enhance the resident
dining experience. Dreaded waste can be avoided with good planning and forecasting because we are predictable eaters, even when our judgment is impaired. For those residents unable to pass dishes, consider the Russian-style of waited family-style service found in restaurants with a European flair. Waiters offer choice of entrée, vegetable and starch from divided dishes. The leftovers can be properly returned to the kitchen.
c-Keeping proper temperatures becomes the biggest challenge. Consider dishes with covers or thermal style dishes to maintain heat. Good infection control is the other regulation consideration.
d-Visit a quality free-standing group home for residents with Alzheimer’s or developmental disabilities, or any Beverly Healthcare Alzheimer’s Care Unit to observe family-style dining. Specially developed policies
and procedures assure regulatory compliance in an environment of home and choice for residents with cognitive challenges.
