F-362(b) Sufficient staff
The facility must employ sufficient support personnel competent to carry out the functions of the dietary service.
Guidelines: Sufficient support personnel is defined as enough staff to prepare and serve palatable, attractive, nutritionally adequate meals at proper temperatures and appropriate times and support proper sanitary techniques being utilized. Procedures: For residents who have been triggered for a dining review, do they report that meals are palatable, attractive, served at the proper temperatures and at appropriate times?
F-363(c) Menus and nutritional adequacy
Intent: The intent of this regulation is to assure that the meals served meet the nutritional needs of the resident.
Probes: Are residents receiving food in the amount, type, consistency and frequency to maintain normal body weight and acceptable nutritional values? If a food group is missing from the resident’s daily diet, does the facility have an alternative means of satisfying the resident’s nutrient needs?
F-364 Food prepared by methods that conserve nutritive value, flavor and appearance.
Intent: The intent of this regulation is to assure that the nutritive value of food is not compromised or destroyed due to prolonged food storage, light and air exposure, prolonged cooking of foods in a large volume of water or prolonged holding on steam table and addition of baking soda.
Probe: Does food have a distinctly appetizing aroma and appearance?
