Opportunities for innovation in dining are consistent with the federal LTC regulations and interpretive guidelines. Be sure to share your thoughts and plans with your state regulatory team, and seek their guidance for compliance expectations. Facilities with innovative dining are enjoying deficiency-free surveys–just use your knowledge and creativity, and always keep regulatory compliance in mind as you plan your dining innovations.
F-246 Accommodation of needs
A resident has the right to reside and receive services in the facility with reasonable accommodations of individual needs and preferences...
Guidelines: The facility’s physical environment and staff behaviors should be directed toward assisting the resident in maintaining and/or achieving independent functioning, dignity, and well-being to the extent possible in accordance with the resident’s own preferences, assessment and care plans.
F-464(g) Dining and resident activities
The facility must provide one or more rooms designated for resident dining and activities. These rooms must 1) be well lighted, 2) be well ventilated, 3) be adequately furnished, and 4) have sufficient space to accommodate all activities.
Guidelines: An adequately furnished dining area accommodates different residents’ physical and social needs.
Probes: How sufficient is space in dining room? Is there resident crowding? Is there flexibility in arranging furniture to accommodate walkers, wheelchairs and other mobility aides?
