                                        Easy Weeknight Burrito Bowls



                                                        For the Rice

                                                1 cup white rice, uncooked

                                                       2 cups water

                                                     1/4 teaspoon salt

                                           1/2 lime juiced (about 1 tablespoon)


                                             2 tablespoons chopped cilantro

                                                       For the Beans

                      1 (15 oz. can black beans, slightly drained. If unsalted add 1/4 teaspoon salt

                           1/4 teaspoon each, garlic powder, ground cumin and chili powder

                                                    For the Vegetables

                                1 tablespoon cooking oil, such as avocado or coconut oil

                                      1 green pepper, seeds removed, thinly sliced

                                           1/2 medium red onion, thinly sliced

                                         Pinch each of sea salt and black pepper

                                                    For the Corn Salsa

                                                1 cup corn, fresh or canned


                                              1/4 cup tomatoes, finely diced

                                            1 jalapeno, seeded and finely diced

                                              1/4 cup red onion, finely diced

                                           1/2 lime, juiced, about 1 tablespoon

                                              1 tablespoon chopped cilantro

                               Pinch each of sea salt and black pepper, plus more to taste
