Carolyn’s Coconut Pie
As told to Dora Davison
3 beaten eggs
1‐1/2 cups sugar
1/2 cup melted butter
4 teaspoons lemon juice
1 teaspoon vanilla
1 can (3‐1/2 oz.) of flaked coconut or 1‐1/3 cups
9” unbaked pie crust
1. Combine eggs, sugar, butter, lemon juice and vanilla.
2. Stir in Coconut.
3. Pour mixture into unbaked pie crust.
4. Bake at 350 degrees for 40 minutes or until knife inserted
just off center comes out clean.
