quinoa with paprika and cumin                                             Prep time:     5 minutes

                                                                                  Cook time:   15 minutes
        quinoa (pronounced KEEN-wah) is a grain native to South America and makes a great side dish for
        lean meats and seafood

        1 C      quinoa                            1   Rinse quinoa in a fine mesh colander.
        ¼ tsp    salt                              2   Place all ingredients in a saucepan with 2 cups of
        ½ tsp    paprika (or try smoked paprika        water.  Cover.
                 for a unique flavor)
                                                   3   Bring to a boil over high heat.
        ½ tsp    ground cumin
                                                   4   Reduce heat.  Simmer for 10–15 minutes or until all
                                                       water is absorbed.
                                                   5   Serve immediately, or refrigerate to reheat later.
