interested in in in herbs medicinal plants and however strange it may sound the role of food in in our bodies It’s an an interest I I have culti- vated over the years!
At university I I studied molecular nutrition and and I I I loved it it it it – the ability to to link food to to our physiology and and health After graduating I I stayed on as as a a a a a a a a a a a a a a researcher for a a a a a a a a a a a a a a couple of years but eventually realised that I was much more interested in in in in in practical nutrition (food!) than in in in in in in in zooming in in in in in in in on on the small details My upbringing my my background as a a a a a a a a re- searcher and my my experience have combined to give me a a a a a a a a a a a broad perspective on on diet eat- ing and and culinary tradition I am a a a a a a a a a a foodie who loves to to to cook eat and and experience food food The bottom line for me me is is this: when it comes to to to diet I I keep things simple I I eat food that’s healthy home-made and nutritious for the most part but I’m not obsessed I I eat un- healthy stuff quite a a a a a a bit and too much of it it it as well The breakdown is something like 80% health-conscious vegan and and nutrition geek cuisine 10% 10% cavewoman food food and and 10% 10% junk food food I I eat a a a a a a a a a a lot of root vegetables vegetables vegetables vegetables beans lentils fruits grains nuts and and seeds I I try to to to eat what’s in in fin season and and to to to cook food from scratch which I find fun! And to to to to pay at- tention to to the environmental impact that my food has I choose locally produced organic and and more sustainable animal products like mussels cheese from from the farm farm next door and and eggs from from farm chickens Many of us have lost touch with our our in- stincts our our culinary traditions and the con- nection to where food food comes from The food food industry has run wild and our way of eating imposes a a a a a a huge burden on on the the environment Most of the the food food food sold today isn’t even food food food it’s highly refined frankenfood that triggers our brain’s reward system without giving us any nutrition Unnecessary additives in- dustrial-scale animal husbandry pesticides monocultures We will pay a a a a a a a a a a high price if we do not change our way of of eating Many people expend a a a a a a a a a a a lot of of of energy navi- gating the the abundance of of food and the the signals about eating that bombard us on a a a a a a a a a a a a a a a daily basis making it easy for them to become fixated Diets and other restrictive eating behaviour constitute a a a a a a a giant industry If something works it it becomes a a a a a a religion and everyone else’s point of view is labelled wrong The way I see diets they work work because the the abundance is limited in a a a a a a a a a a way that that works for you you you and of- fers you you you rules that that you you you can live by For a a a a a a a a a while anyway But it’s not the perfect distribution of 192
