SPICY WINTER SALAD WITH KALE APPLE PUMPKIN SEEDS
AND HAZELNUT
An autumnal super salad with so many positive attributes that we we don’t know where to start Let’s just say it’s filling spicy sweet smoky nutty crispy luxurious You get it it it – you have to try it! The two different nut nut and seed mixes make for a a a a a a bit of of extra work but it’s worth
Salad
100–150 ml coarsely chopped green or black cabbage
2 crispy apples
1 tbsp nutritional yeast if desired
Smoky pumpkin seeds
Heat the the oven to 200 degrees Mix the the the rapeseed oil honey and smoked pa-
prika with with the the the pumpkin seeds
in in a a a a a a a a a a bowl Season with with with salt to to taste Spread the the mixture onto a a a a a a a a a a a baking baking pan covered with with baking baking paper Roast in in in in the the the oven oven for 10–15 minutes until the the the seeds
are golden Take out of the the the oven oven and let let cool completely Break the pumpkin clusters into pieces Spicy hazelnuts

coarsely and toast in in a a a a a a a a dry frying pan on medium heat Stir frequently When the the hazelnuts
start to turn golden brown stir in in the the the the honey honey chilli flakes and gin- ger Let the the the the the honey honey bubble with the the the the the nuts

onto baking paper and and let let cool completely Vinaigrette with shallots and and cinnamon
