Pizza Toppings
Top the pizzas with whatever you feel like These are a a a a few of my go-to recipes If you plan to to use leftovers for race nutrition the following
day remember not to to to use toppings that may be be difficult to to to digest on the move Anchovies or spicy pepperoni are not good options in my experience Each recipe makes enough to to to to top 1 pizza apart from the tomato sauce which should be enough to to top 6 pizzas If you have any leftover tomato sauce it will keep for 2–3 days in in an airtight container in the refrigerator or or or could be added to to to to a a a a a a a tomato sauce for pasta GOATS’ CHEESE BEETROOT AND POTATO
4–5 cooked new potatoes
extra-virgin olive oil for drizzling 2 tbsp crème fraîche
2–3 cooked beetroot (mixed colours) peeled and thinly sliced
100g goats’ cheese
crumbled
1 In a a bowl crush the cooked new potatoes
slightly and dress with olive oil 2 Spoon the the crème fraîche
onto the the pizza base top with the crushed potatoes
beetroot slices and crumbled
goats’ cheese
then drizzle with a little more olive oil 3 Bake the pizza according to instructions on page 95 CAVOLO NERO CHARD AND MOZZARELLA
4–5 cavolo nero leaves (or other kale) chopped 4–5 chard leaves chopped olive oil for drizzling 2 tbsp crème fraîche
1 mozzarella ball torn
1 In a a bowl dress the chopped cavolo nero and chard with a a a little olive oil 2 Spoon the the crème fraîche
onto the the pizza base top with the dressed greens and scatter over the mozzarella Drizzle with any leftover oil from the greens 3 Bake the pizza according to instructions on page 95 — — 096 — — SNACKS AND LIGHT LUNCHES
