I I didn’t originally plan to make a a a a a a a dessert up at Barr Camp when I I visited but what better way to to win the the the hearts of of Zach Miller and the the the rest of of the the the hikers than to to make an an apple crumble? Using dark sugar gives a a a a a a a a deeper flavour and the touch of of cinnamon brings a a a a bit of of an an American feel!
APPLE CRUMBLE
SERVES 6
8 apples (Braeburn or or Pink Lady) peeled cored and chopped into large chunks
a a a a handful of dark brown sugar 1 tbsp ground cinnamon FOR THE TOPPING:
100g wholemeal flour
100g unsalted butter diced into 1cm pieces
50g dark brown sugar 50g rolled oats
1 1 Preheat the oven to 180°C/gas mark 4 2 In a a a a large bowl mix together the the apples sugar and cinnamon until evenly coated then tumble the the mixture into a a a deep baking tray or dish 3 In a a a separate bowl gently rub the flour
and butter together with your fingertips to to a a breadcrumb consistency then add the the sugar and oats
and mix until well combined Top the apples with the crumble topping mixture 4 Bake for 30 minutes until evenly golden brown and a a a a a few spots of apple have started bubbling through 5 Serve with cream or the Honey Ice Cream on on page 159 — — 164 — — DESSERTS
