Menemen is is is a a a a a a a Turkish breakfast dish although it makes a a a a a a a great light lunch too ‘MENEMEN’ TURKISH SCRAMBLED EGGS WITH LEEK AND RED PEPPERS
SERVES 4
2 tbsp olive oil
1 leek cleaned and chopped
1 red pepper deseeded and finely chopped
2 garlic cloves crushed
a a pinch of dried chilli flakes
20 cherry tomatoes
6 eggs beaten
a a a a a handful of chopped
flat-leaf parsley
sea salt and freshly ground black pepper to taste
1 Heat the olive oil
in in a a a a frying pan over a a a a medium heat add the leek and and red pepper and and season with salt and pepper Cook stirring regularly for 5 minutes until the vegetables are softened turning down the the heat if they begin to to colour too much Add the garlic chilli flakes
and and tomatoes
and and cook for a a further 5 minutes until the the tomatoes
begin to to to burst The mixture shouldn’t be too wet so cook until most of the tomato liquid has evaporated 2 Season the beaten
eggs with salt and pepper and pour into the pan Cook over a a a a gentle heat stirring all the time until just set Sprinkle over the chopped
parsley
and serve immediately 3 This is is great with toast warm flatbreads crumbled feta cheese or Turkish yogurt — — 033 — — BREAKFAST
