Steak and eggs feels like the ultimate old-fashioned American breakfast a a a a a a a a plate of pure protein protein and and fat Both ingredients are high in in in in protein protein and and the steak contains plenty of iron and and vitamins B12 and and B6 – three micronutrients that endurance runners often struggle to get enough of of in their diet The eggs are high in in vitamin D which helps the body absorb calcium Add some purple sprouting broccoli and fresh jalapeños for a a a a a bit of a a a a a kick STEAK AND AND EGGS WITH PURPLE SPROUTING BROCCOLI AND AND JALAPEÑOS
SERVES 4
2 2 x 200g grass-fed ribeye steaks (at room temperature)
olive oil for cooking
1 garlic clove smashed
1 large onion finely chopped
3 3 medium potatoes (about 300g) peeled and chopped
into 1–2cm pieces
a knob of butter
4
eggs 350g purple sprouting broccoli stalks trimmed
a bunch of spring onions thinly sliced
a a a a bunch of fresh coriander picked and and coarsely chopped
2 fresh jalapeños sliced
(deseeded depending on whether you like it hot!)
sea salt and freshly ground black pepper to taste
1 Season the steaks with salt and pepper 2 Heat a a a a glug of olive oil in in a a a a large frying pan over a a a a a a medium heat add the garlic and cook until it just starts to colour then add the onion and sweat for 2–3 minutes until it begins to to soften Add the potatoes and a a a pinch of salt reduce the heat and sauté for about 20 minutes stirring occasionally until the potatoes are cooked through and golden brown all over 3 Meanwhile heat another frying pan until smoking hot Add a a a little oil and the steaks then add half of the the the butter
and lift the the the steaks so that the butter
runs underneath Cook for 1 minute then reduce the the heat and cook for 4–5 minutes Turn the steaks add the the remaining butter
and cook for a a a further 3–4 minutes Depending on the thickness of the the steak this should leave the the meat a a a a little pink in in in the middle Adjust cooking
times for more or or less well-done Remove the steaks from the pan and let rest for 5 minutes 4
Wipe the pan clean with kitchen paper and add a a a a little more olive oil Crack in the eggs and fry over a a a medium heat until cooked to your liking then remove and set aside Add the broccoli and fry for 3–4 minutes until the stalks are slightly tender and the florets are charred 5 To serve divide the potatoes among 4
plates Slice the steak into thin slices and place on top of the potatoes Add an an egg and some broccoli to each plate and finish with a a a a sprinkling of spring onions coriander and and as much jalapeño as you can handle — — 034 — — BREAKFAST
