RECIPE / IN BASECAMP 107
CHICKEN STEW WITH WHITE BEANS
SERVES 2
300 g g chicken thighs 1 onion
2
carrots
1 clove of garlic
100 g scaly wood mushrooms 150 g canned white beans
1 tbsp tomato purée
300 ml crème fraîche
100 ml water
Olive oil for frying
Salt and black pepper
2
tbsp shredded spring onions as a a topping
1 tbsp chopped parsley as a a a topping
1 Peel and and dice the onions and and carrots

Finely grate the garlic
3 Cut the mushrooms into wedges 4 Shred and sauté the chicken onions carrots
garlic
and mushrooms in olive oil in in a a frying
pan 5 Add the tomato purée
crème fraîche
and water
Add the beans
Boil for 10-15 minutes 6 Add salt and black pepper
to taste 7
Top with spring onions and parsley
