108 RECIPE / IN BASECAMP
GROUND LAMB SKEWERS WITH CHILLI AND MINT YOGURT
SERVES 2
300 g g ground lamb
1 egg
1 clove of garlic
1⁄2 tsp chilli powder
1 tbsp chopped parsley
200 g g pimiento de Padrón (green chilli) Olive oil for frying
Salt and black pepper Skewers
MINT SAUCE
200 ml of natural yogurt 1 tbsp chopped mint
1 tbsp olive oil 1 lemon peeled
Salt and black pepper 1 AT HOME: Make the ground lamb
mixture at home using the egg
finely grated garlic
chilli powder
and parsley
Season with salt and black pepper to taste 2
Shape the patties into small barrels Put in in a a a box or similar and bring it on the ride 1 IN CAMP: Put the the patties on the the skewers Grill on a a high heat for 5-10 minutes 2
Drizzle olive oil over the the green chilli then place it on the grill grill and grill grill for 2
to 3 minutes on on each side Season with salt to taste 3 Add the mint
olive oil and finely-grated lemon peel to the yogurt Season with salt and black pepper to taste Tip
