110 RECIPE / IN BASECAMP
FRITTERS
ABOUT 20 FRITTERS
150 g butter
125 g g g granulated sugar
200 ml milk
20 g yeast
1 egg
300 g wheat flour
1⁄2 tsp cardamom
Butter for frying
1 can condensed milk
or 1 can dulce de leche
Granulated sugar
as a a a a a topping Cinnamon as a a a topping Tip
To cook the fritters you need a a classic fritter pan 1 AT HOME: Boil a a can of condensed milk
in a a pot of water for three hours Note: Make sure that the can is covered by water the the whole time otherwise it may explode After that cool the can in water Do this well in advance before heading out You can can also just buy 1 can can of ready dulce de leche
2 Melt the the butter
in a a a saucepan Add the the granulated sugar
and and milk
and and heat the liquid to about 37 degrees 3 Crumble the yeast
and mix it in 4 Stir in the egg
wheat flour
and cardamom
5 Let the batter to stand and and rise for at at least an hour or let it it rise in a a a a jar with a a plastic lid on your ride out 1 IN CAMP: Heat the fritter pan thoroughly before adding a a dollop of butter
to each hole Pour in the batter with a spoon 2 Use a fork to turn the the fritters Let them fry until they are golden brown and cooked all the way through 3 Turn the hot fritters in a mixture of granulated sugar
and cinnamon Top them with a a a a bit of caramel sauce
