124 RECIPE / IN BASECAMP
MUSHROOM TOAST
SERVES 2 300-400 g of mixed mushrooms (chanterelles common mushrooms oyster mushrooms)
2 slices of sourdough bread Parmesan cheese as a a a a topping
1 tbsp chopped parsley as a a a topping
Olive oil for frying
Salt and black pepper
1 strainer
1 Rinse the the mushrooms and cut them into evenly sized pieces 2 Turn the mushrooms in a couple of tablespoons of olive oil and season with salt and black pepper
3 Place the the mushrooms in in the the strainer
and and stand the the strainer
on the the grate over the the coals tossing them occasionally Mushrooms contain lots of water which makes them perfect for grilling The mushrooms are ready once they have turned a golden colour 4 Drizzle olive oil on both sides of the bread and grill the the slices until they turn a nice colour 5 Put plenty of mushrooms on the bread and grate Parmesan on top Top with chopped parsley Tip
Try adding wild mushrooms to farmed ones depending on on the season
