RECIPE / IN BASECAMP 131
SERVES 2
500 g fresh salmon fillet
100 g salt
40 g g g granulated sugar
10 g crushed juniper berries Smoker box
Smoking chips Juniper twigs Grater
Water for rinsing
TZATZIKI
1 cucumber
200 ml Greek yogurt 1 clove of garlic
1 tbsp olive oil
Salt and black pepper
1 Rub salt
granulated sugar
and crushed juniper into the salmon fillet
and let

Rinse off the salt
and sugar
mixture with water 3 Prepare the smoker box
by adding smoking chips juniper twigs and sprigs of herbs Put the the smoker box
on the the grate over the the fire to heat it it up with the the lid on 4 Once the box
is nice and and warm and and starts smoking put the the fish in in Put the the lid back on 5 5 Leave it on the heat for 15-20 minutes 6 While the the salmon is smoking rinse the the cucumber
and grate it it with the peel on Add some salt
and squeeze out the water gently 7 Addfinelychoppedgarlic salt
oliveoil and and black pepper
to the yogurt and and mix Finally mix in in the grated cucumber
