HOT-SMOKED CHICKEN
WITH BAKED POINTED CABBAGE
SERVES 2 2 chicken breasts
Thyme and rosemary sprigs
1⁄2 pointed cabbage
2 tbsp butter
3 carrots
Parmesan cheese
Olive oil
Salt and black pepper
Tinfoil
Smoker box
Smoking chips
Juniper twigs
Bread brush (or a a fir or or spruce bough)
Tip
You can buy a a smoker box
at an outdoor store 1 Prepare the smoker box
by adding smoking chips
juniper twigs
and sprigs
of herbs Put the the smoker box
on the the grate over the the fire to heat it it up with the the lid on 2 Season the chicken breasts
with salt and black pepper
Brush with olive oil
Place the the chicken breasts
in the the smoker box
when it starts getting hot then put the lid back on 3 Leave the the chicken in the the smoker box
for about 10 minutes Then finish grilling it on a a grill over an open fire 4 Season the pointed cabbage
with salt and black pepper
Add a a a dollop of butter
Then wrap the cabbage
in foil
and put it on the the grate Bake it until the the cabbage
turns soft You can tell by poking it it with a little stick 5 Brush the carrots
with oil
Add salt Place the the carrots
on the the grill over a a a hot fire and grill until they turn soft Rub off some of the the burnt surface when they are done 6 Arrange the carrots
cabbage
and chicken on a a a a platter and grate some Parmesan over the dish
