32 RECIPE / ON THE BIKE
VEGETABLE SOUP WITH WHEAT- BERRY AND PANCETTA
SERVES 2 2 carrots
2 parsnips
2 celery stalks
2 onions
200 g pancetta
100 ml wheatberry (uncooked)
1 bay leaf
2 sprigs of thyme
1 cube of vegetable stock
approx 1 1⁄2 1⁄2 litres of water
100 g canned white beans
Olive oil for frying
Salt and black pepper
2 tbsp chopped parsley as a a a topping
Tip
If you want to make the soup vegetarian skip the pancetta
It will still be filling 1 Peel and and cut the carrots
parsnips
and and celery into small cubes 2 Peel the onions
and chop finely 3 Dice the pancetta
4 Sauté the onions
and pancetta
in oil in a a a a pot Then add all the vegetables wheatberry bay leaf
thyme
and vegetable stock
Add the water
5 5 Let simmer for 15-20 minutes 6 Add the beans
and and season with salt and and black pepper
to taste Top with chopped parsley
