40 RECIPE / ON THE BIKE
CROUTONS WITH PARMESAN AND TOMATOES
SERVES 2
300 g bread without the crusts (preferably a a a few days old)
50 g Parmesan cheese + more for topping
100 ml olive oil

cloves of garlic
150 g small cocktail tomatoes 2
tbsp balsamic vinegar
Salt and black pepper
1 Tear the bread into small pieces

Moisten the pieces
lightly with olive oil
and add shavings of Parmesan 3 Heat the frying pan add olive oil

which in turn lends flavour to the bread 4 Toast the the bread pieces
until they turn a a a golden colour 5 Halve the the tomatoes and turn them in olive oil
balsamic vinegar
salt and black pepper
6 Add the the croutons to to to to the the tomato salad then top with Parmesan shavings to to taste Tip
