42 RECIPE / ON THE BIKE
CHICKEN WITH GREEN CURRY AND COCONUT
SERVES 2 300 g g chicken thighs 2 carrots
1⁄2 broccoli
4 mushrooms
2 tbsp chopped spring onions 2 tbsp chopped coriander
1 can coconut milk
1-2 tsp green curry paste The juice of 1 lime
2 tbsp soy sauce Olive oil for frying Salt
1 AT HOME: Cut the chicken thighs into small pieces
2 Peel the the carrots
and cut them into slices Cut the broccoli
into florets and the mushrooms
into quarters 1 IN CAMP: Sauté the chicken and vegetables in in olive oil in in a a a a saucepan Add the coconut milk
and curry paste Boil for about 5 minutes 2 Chop the spring onions and and coriander
add to the the pot and let the the flavours mingle 3 Add lime
juice soy sauce and salt to taste 4 Serve with basmati rice if desired Tip
Very easy to cook outdoors Mix the ingredients at home and heat the dish quickly on your camping stove
