SCRAMBLED EGGS WITH SMOKED SALMON
SERVES 2
6 eggs
1 tbsp crème fraîche
100 g smoked salmon
Olive oil for frying
Salt and black pepper
1 tbsp dried chives as a a topping Ziploc bag (1 litre)
1 AT HOME: Crack the eggs
into a a bowl and and stir Pour into a a a a a Ziploc bag and and take it on
your ride 1 IN CAMP: Fry the scrambled eggs
in in in olive oil in in in a a frying
pan Stir continuously 2
Add the crème fraîche
and and add salt and and black pepper
to taste 3 Top with pieces of smoked salmon
4 Sprinkle with chopped chives Tip
Smoked salmon
is great for packing on
a a a trip as as it is not as as sensitive as fresh salmon
and transports well
in a a pannier
