CAMPFIRE BAKED POTATOES
SERVES 2
300-400 g baby potatoes
100 ml crème fraîche
4-5 slices of cured ham (Parma or Serrano)
2
tbsp chopped spring onions Olive oil
Salt and black pepper
Tinfoil
1 Turn the potatoes
in olive oil
salt and black pepper

Double-wrap the potatoes
in foil
and place directly on the coals Grill for 25-30 minutes depending on the size of the potatoes
3 Feel to to make sure a a a potato is done by poking a twig or or fork through the foil
If it feels soft the potato is done 4 Open the foil
and use a a fork to lightly crush the potato 5 Add dollops of crème fraîche
and shredded ham 6 Sprinkle with hopped spring onions and some olive oil

Eat right out of the foil
