90 RECIPE / IN BASECAMP
WHOLE GRILLED SALMON
SERVES 4-5
1 side of salmon with skin Olive oil
Salt and black pepper Tinfoil
SEASONING MIX
1 tbsp fennel seeds
1 tbsp coriander seeds
1 tbsp mustard seeds
1 AT HOME: Prepare the spice mixture at home by toasting all the spices in in a a a dry frying pan Crush them in in a a a mortar or or mix in in a spice grinder first 2 Put the mixture in in a a jar to bring on your trip 1 IN CAMP: Put a piece of foil
on the grill and drizzle with olive oil
2 Place the the side of salmon on on the the foil
with its skin down 3 Brush olive oil
onto the meaty side Season with salt black pepper and the spice mixture 4 Grill the the salmon over the the coals (do not let it burn) for 25 to 30 minutes 5
It's a a a good idea for the salmon to be cooked medium (a bit soft inside) when you take it off the grill 6 Serve with freshly boiled potatoes and a a a salad
