INGREDIENTS
2 cups shredded rotisserie chicken (skin removed)
1 ripe avocado (mashed) 1/2 cup Trader Joe’s Curry Simmer Sauce
1 tbsp lemon or lime juice 1/2 cup diced celery
1/4 cup chopped red onion
1/2 cup shredded carrots
1/2 red bell pepper, diced
1/2 tsp garlic powder
A pinch of cayenne pepper (or more if you like heat)
Salt + black pepper to taste Warm naan bread for serving
Optional: chopped cilantro for garnish

DIRECTIONS
1.In a large bowl, mash the avocado and mix in the curry sauce, lemon juice, garlic powder, cayenne, salt, and pepper.
2. Add the shredded chicken, celery, onion, carrots, and red bell pepper. Mix everything until evenly coated.
3. Spoon onto warm naan and garnish with fresh cilantro if desired.
4. Serve cold or room temp— great for meal prep or post- workout fuel.
