INGREDIENTS
4 medium hard-boiled eggs (chopped)
3 medium avocados (diced) 1 tbsp sea salt
1 tbsp black pepper
1 bunch cilantro (chopped) 4 celery stalks (diced)
1 bag fresh spinach (roughly chopped)
Optional add-ons:
1⁄2 red onion (finely diced)
1 tbsp lemon or lime juice (for brightness + to slow avocado browning)
Dash of olive oil or tahini for healthy fats (if not fasting)

DIRECTIONS
1. Combine all chopped ingredients in a large bowl.
2. Gently mix to coat everything evenly (avocado acts like a natural creamy binder).
3. Serve immediately or store in fridge for up to 2 days.
