INGREDIENTS
4-5 Roma Tomatoes diced
1 Yellow or Orange Bell Pepper diced
2-3 Garlic Cloves minced
1/2 Red Onion diced
1 Jalapeño diced/deseeded
(or leave seeds in for more heat)
1 can Black Beans drained & rinsed
1 can White Corn drained 1 can Navy Beans drained Honey Lime Vinaigrette 11⁄2 T. Honey
1/4 t. Onion Powder 1/4 t. Garlic Powder 1/4 t. Chili Powder 1/4 t. Cumin
1 T. White Vinegar
Fresh Juice from 1-2 Limes
Salt & Pepper to Taste I
Cowboy Caviar Dip
DIRECTIONS
1.In a large bowl, combine all main ingredients.
2.In a small bowl, combine Honey Lime Vinaigrette ingredients and mix until smooth.
3.Pour Honey Lime Vinaigrette into large bowl with main ingredients.
4.Cover and chill for at least 1 hour for flavors to blend.
5.Serve with your favorite tortilla chips.
