        The Lean Store is divided into 3 areas:             The back of house consists of key areas including:
        1. Shop floor                       270.45 m²       - Storage area
        2. Back of house                 117.04 m²          - In store bakery
        3. External Yard                   83.46 m²         - Colleague rest area
                                                            - Manager’s office
        The building footprint of the model lean store      - WC
        is 386.8 m² (4,163.5 ft² ) with an approximate      - Freezer & fridge
        percentage split of 70% to the shop floor area and
        30% to the back of house.
