Dom Pérignon
Making the best Champagne in the world since the 17th century.
Whether it was fate, destiny or heavenly intervention, Dom Pierre Pérignon’s exclamation of “Come quickly! I am drinking the stars!” in the late 17th century would change the world of wine forever.
Neither champagne nor the sparkling wines we know and love today existed until then. It was a clever blend of visionary spirit and daring that saw the French king of the time served with something other than his favoured blood red wine, and even better good fortune that the stars of Dom Pérignon’s light and golden wine quickly became his drink of choice.
In 1668, the young monk Pierre Pérignon took up his duties as cellarer at the Benedictine Hautvillers Abbey in the western hills of the Marne. For forty-seven years, driven by his keen observations, passion for experimenting and unyielding tenacity, Dom Pérignon innovated, perfected and firmly established techniques developed over long years of trial and error:
Dom Pérignon is vintage only. Each vintage wine is created from the best grapes grown in one single year, allowing it to reinvent itself by expressing and interpreting the unique characters of the seasons.
The balance between uit and acidity is awesome.
97 Points Antonio Galloni for The Wine Advocate.
Dom Pérignon
Fresh, crystalline and sharp, revealing an airy, gentle richness that settles to a smooth, mellow, mature wine.
Dom Pérignon Rosé
This complex richness of aromas, radiating warmth, creates a vibrant finish of woody spices and blossom.
Dom Pérignon Oenothèque
The 1996 Dom Pérignon Oenothèque offers up layers of pastry, lemon, smoke and toastiness. At first deceptively understated, the wine turns positively explosive and layered on the palate, showing remarkable tension, elegance and power, all wrapped around a seriously intense frame.
All vintages are available on request.
WINE TIP With such an iconic wine, it is best to stick with staple luxuries: strawberries, lobster, fresh crab, exquisite caviar, and lobes of foie gras...
