Dom Pérignon
Certainly near the top of the well known mass produced ‘luxury’ champagnes.
Champagne as known and loved was not perfected until Dom was in charge of the cellars; most likely his attention was drawn to wine that was in a corner of the cellar which had started fermenting a second time quite naturally in the bottle. The prelude to this effervescent discover was most likely a series of explosions. Proximity to Paris is what feted the wines of champagne and Dom Pérignon’s light and golden Champagne quickly became Paris’ and in turn the drink of choice for the great and the good from surrounding areas...
Dom Pérignon Vintage Brut
Fresh, crystalline, sharp yet airy with a gentle richness, smooth, mellow, and mature wine. Predominantly made using a 50% Chardonnay and 50% Pinot Noir blend. Ideal with seafood and vegetarian dishes.
Dom Pérignon Vintage Rosé
Complex richness of aromas, vibrant finish of woody spices and blossom. Whilst working well for aperitif and canapes.

Dom Pérignon Vintage Oenothèque
Once in a while the cellar master at Dom Perignon opens the
‘library’ or bibliotheque of wines. This means wines which are yet to be disgorged (the process of removing the yeasts from the bottle). These recently disgorged wines often give the wine lover a chance to experience the freshness yet complexity which can only come from wines which have been suspended in time so to speak. Typically the wines exhibit layers of pastry, lemon, smoke and toastiness. At first deceptively understated, the wine turns positively explosive and layered on the palate, showing remarkable tension, elegance and power, all wrapped around a seriously intense frame.
