MOUNTAIN SHRIMP FROM STYRIA
Oscar-worthy
The MAYRLIFE kitchen team is always on the lookout for high-quality
local produce that is grown in harmony with nature. One example is the
sashimi-grade shrimp from nearby Rottenmann. The company White
Panther cultivates two varieties, including the rare blue Stylirostris. The
fresh water shrimp are raised without antibiotics or artificial additives,
nurtured in pure mountain spring water. To maintain the required tem-
perature of 28°C, the farm utilises heat generated as a by-product from
a nearby wood gas plant. The result: fresh shrimp with a mild, nutty
flavour, and a firm texture. Most recently, they had their moment in the
spotlight at the Oscars, when Austrian celebrity chef Wolfgang Puck
selected these mountain shrimp for his menu. He first discovered them
as a guest at the MAYRLIFE Medical Health Resort.
