                  "Caramel Apple Crisp"















                                                     I n gr edien ts



                 1 pou n d sm all cook in g apples, cu t in to 1/ 2-in ch  slices (abou t 5
                                                          cu ps)
                               ¼ cu p low -calor ie cr an ber r y ju ice or w ater

                                  1 teaspoon  f in ely sh r edded lem on  peel
                                          ¼ teaspoon  gr ou n d allspice

                                               1 cu p low -f at gr an ola

                                 ¼ cu p ch opped pecan s, toasted (see T ip)
                                ¼ cu p f at-f r ee car am el ice cr eam  toppin g

                  L igh t or low -f at van illa ice cr eam  or f r ozen  yogu r t (option al)




              St ep 1: In I0-inch skillet, combine apple slices, cranberry juice,

              and lemon peel. Cook, stirring occasionally, over medium-high
                   heat for 6 to 8 minutes or until apples are crisp-tender.

                        Remove from heat. Sprinkle allspice over apples.


              St ep 2- Spoon apple mixture into dessert dishes. Sprinkle with

                 granola and nuts. Drizzle with caramel topping. If desired,
                                            serve with ice cream.




                           Tip: To t oast  nut s, spread in a shallow baking pan lined
                        wit h parchment  paper. Bake in a 350 degree F oven for 5 t o
                           10 minut es or unt il golden, shaking pan once or t wice.
