            "Chicken &  Vegetable Pasta with Lemon Pesto"

                                                                                               I n gr edien ts

                                                          1 (16-ounce) package vegetable linguine or spaghetti pasta

                                                                                      2 tablespoons unsalted butter
                                                                                             2 tablespoons olive oil
                                                                                            3 cloves garlic (m inced)

                                                                        5 boneless, skinless chicken breasts (cubed)
                                                                                                   1/2 teaspoon salt
                                                                                         1/8 teaspoon white pepper

                                                                                                 1 cup heavy cream
                                                             1 (9-ounce) package basil pesto (3 tablespoons set aside)

                                                          1/4 cup fresh squeezed lem on juice  (1 tablespoon set aside)
                                                                                       1 teaspoon grated lem on zest
                                                                                            2 cups frozen baby peas

                                                                            1/3 cup freshly grated Parm esan cheese

            #1- Bring a large pot  of salt ed wat er t o a boil. Add past a t o boiling wat er;

            cook  unt il  al  dent e  according  t o  package  direct ions.  When  past a  is  done,

            drain well and keep warm.

            #2- Meanwhile, cook chicken. In a large saucepan, combine but t er, oil, and

            garlic  over  medium-high  heat .  When  garlic  begins  t o  sizzle,  add  chicken
            cubes; sprinkle wit h salt  and pepper.


            #3 -St ir over medium heat  unt il chicken is almost  cooked t hrough, about  4 t o
            6 minut es. St ir in cream and bring t o a simmer; reduce heat  t o low.


            #4 -To t he chicken mixt ure, add all but  3 t ablespoons of t he pest o, pour in 3

            t ablespoons lemon juice, t he lemon zest , peas, and Parmesan cheese. Toss
            over medium heat  unt il chicken is t horoughly cooked and t he mixt ure is hot .


            #5- Place t he warm past a in a serving bowl and t op wit h chicken mixt ure. In
            a  small  bowl,  combine  t he  remaining  3  t ablespoons  pest o  wit h  t he

            remaining 1 t ablespoon lemon juice. Drizzle over t he past a and chicken and

            serve immediat ely.?
