Purchasing Fresh Fish
Buying fresh fish can be a challenge at times if you don’t know what to look for. With the
following guidelines, you will be better equipped to purchase fish that is appealing in taste and
appearance. The first thing to do is to build a relationship with your local fish monger. They will
keep you abreast of what is in season and what is fresh that day. Once you select a fish, you
want to do a visual inspection. Whether you select whole fish or filets, you want to see that the
flesh looks moist and without blemishes or cracks. If you are able to touch the fish go ahead
and give it a gentle poke. If the flesh slowly springs back then that is a good sign. If your finger
leaves an indentation then the fish is on the decline or may have been previously frozen. The
skin should look slick and shiny. The flesh should have a translucent quality to it. If the fish
has gills, they should be bright red and not brown. Eyes should be clear and not cloudy. Next,
you will want to get close and smell the fish. It should smell like the sea, not fishy. These quick
tips will help to ensure that you are getting the freshest fish possible next time you venture
out to the store.
