RESTAURANT WEEK FINALE EVENT – BARREL AND ASHES DINNER

Celebrate the end of the 2018 Amelia Island Restaurant Week with the Finale
Dinner at Omni Amelia Island. Executive Chef Daven Wardynski who is renowned

for using the freshest local ingredients he can get his hands on. Chef Wardynski will
feature a Barrel & Ashes themed dinner focusing on the complexities behind
smoked foods and coal roasted vegetables all while incorporating various barrel aged

ingredients for each course.

All barrel aged ingredients are aged on site in the Barrel Room that is located at the

Sprouting Project, which also has a state of the art aquaponic green house, an
expansive organic garden, a bee apiary
and resident chickens. This is where Chef
Daven gets a lot of his ingredients from

including hot peppers for his barrel aged
hot sauces as well as the honey for his
honey infused whiskey.
