Joining Gary as judges on this year’s panel are Darragh
Nugent and Derek Marsden, proprietors of Dublin’s
acclaimed Ugly Duckling sandwich bars. The two friends
opened the first Ugly Duckling in the Epicurean Food
Hall on Liffey St. in 2013. With their unique sandwiches,
made on the freshest bread and with locally-sourced
ingredients, it wasn’t long before the Duckling was
hailed as one of Dublin’s top lunch destinations. The
lads opened their second restaurant in George’s Arcade
in 2015.

THE COMPETITION

Just as was the case in 2014, the standard
of entries was incredibly high. Each of the
recipes was judged on its nutritional value,
taste and how easy it was to follow. The
judges were very impressed with all of the
recipes, which ranged from a spectacular
duck terrine to simple and delicious jacket
potatoes with butter. All of the entrants
are to be congratulated and encouraged to
keep cooking and sharing their love of food.
