with antique Mexican tile work, dark-stained wood
floors, communal tables, and hand-blown glass lanterns.
The menu showcases Chef Richard Sandoval’s vibrant
take on traditional Mexican recipes using high-quality
and fresh ingredients, including those that are sourced
seasonally from Maya’s on-site garden. Signature dishes include lobster and shrimp Yucatan, traditional Mexican chicken and pork braises,
and carne asada. A highlight of the restaurant located in the Westin Riverfront Resort and Spa is the feature of more than 150 agave-based spirits and house-infused tequilas.
TORO
Located in Viceroy Snowmass, Toro Kitchen and Lounge creates an experience with the flavors of Latin contemporary dining. Delight in Pan-Latin-inspired dishes from acclaimed chef and restaurateur Richard Sandoval. The menu draws inspiration from the flavors of various Latin American regions. Whenever possible, organic and sustainable products sources from Colorado are incorporated into the menu.
