Ingredients
•
½ packet of pasta (penne, spirals, shells)
•
1 tin of diced tomatoes
•
1 cup of grated carrot
•
½ cup of chopped onion
•
1 vegetable stock cube
•
1 cup of water
Optional:
•
½ cup of peas
•
½ cup of basil
•
2-4 cloves chopped garlic
•
1 tsp of sugar (softens acidity)
•
Dash of nutmeg (reduces heartburn)
Wash and chop/grate vegetables.
Add tinned tomatoes, stock cube and water to a deep frypan. Then add vegetables
and pasta into pan.
Let it simmer on low-medium heat until pasta is soft all the way through, stirring
occasionally. Tip: Please follow pasta packet instructions for exact timings.
Serve in a bowl with a side of bread or garlic bread if desired.
