Ingredients
•
Fresh salmon fillet or
tail (Alternative: 1 tin of
salmon)
•
1 cucumber
•
¾ cup of red onion
Preheat the oven to 200°C. (If using tin
of salmon skip to step 4)
Season salmon with salt and pepper.
Then place salmon on the tray lined
with baking paper skin-side down.
Bake for 10-12 minutes. Once cooked
shred salmon and set aside.
Chop ingredients into small pieces and
set aside in a bowl.

Add lemon juice, olive oil and salt
and pepper to taste in a ramekin
(or jar if you have one).

1 cup of cherry tomatoes
•
½ avocado (chopped)
•
2 cups of lettuce (chopped)
•
½ tsp of parsley (chopped)
•
3 tbsp of lemon juice
•
3 tbsp of olive oil
•
Salt and pepper to taste
Single Serving
Salmon Salad
Method
6 Whisk (or shake) to combine the
ingredients for the dressing.
7 Add salmon and veggies to a
bowl and mix.
8 If you are happy with the
dressing, pour it over the salad
and enjoy.
