Ingredients
•
1 spinach packet
•
1 garlic clove – diced or whole
•
2 potatoes
•
Parmesan cheese for taste
•
1 tsp of olive oil
•
Salt and pepper for taste
Chop potatoes into small pieces. Place potatoes in a pot of water and boil on medium
heat for 20 minutes until they are tender and then drain.
Cook spinach in boiling water for approximately 3-5 minutes, drain well and set aside.
Tip: You can use the same water from the potatoes.
In the same pot, sauté garlic for 10 seconds until fragrant. Add spinach, potato and
mash them until smooth.
Add bread crumbs, cheese, salt, pepper, chilli, adding olive oil as needed and mix
through. Tip: Can be served on crusty toasted bread or as a side dish.
