Recipe for Matzo Pizza
The thin, crispy bread that the Jews eat at Passover is delicious as a pizza base! If you don’t want to make the matzo, you can buy them ready-made from most big supermarkets. They must be made quickly so that they do not rise at all because of the rules about eating unleavened bread during Passover.
You will need:
Greaseproof paper (optional)
Baking tray Mixing bowl Wooden spoon Rolling pin
Fork
100 ml sunflower oil (plus extra for greasing) 250 g white flour plus some for dusting
1⁄2 teaspoon of sea salt 100 ml water
Vegetarian pizza toppings of your choice, e.g. tomato sauce, mini tomatoes, peppers, kosher cheese, kosher olives, herbs, spinach, mushrooms
1 Preheat the oven to 200°C/180°C fan/Gas Mark 6.
2 Oil the baking tray or line with greaseproof paper.
3 Mix the flour and salt in the bowl with the spoon. Add the oil and stir.
4 Add the water and knead the mixture with your hands until you have a soft
dough. Add more water if it’s too dry.
5 Sprinkle some flour on a work surface and tip the dough out, kneading it for
about three minutes.
6 Flatten the dough with the rolling pin until it is about 5 mm thick and shape it
to fit the baking tray.
7 Place the dough on the tray and prick
it all over with the fork.
8 Cook for 2 minutes until the matzo
base is crispy.
9 Take the matzo base out of the oven
and ask an adult to help you to flip it, then cover it with the pizza toppings of your choice.
10 Put it back in the oven and cook until the toppings are cooked. This should take 5–10 minutes.
