You will need:
500 g porridge oats
80 g desiccated coconut
150 g nuts, chopped or finely sliced: almonds, pecans, cashews, walnuts,
hazelnuts, peanuts – or a mix
80 g sunflower seeds, pumpkin seeds – or a mix
150 g of dried fruit: raisins, chopped apricots, cranberries,
blueberries, mango, pineapple, or a mix
30 ml syrup (either maple or golden)
25 g light brown sugar
80 ml sunflower or rapeseed oil
100 ml apple juice
1 teaspoon vanilla extract
1 teaspoon ground cinammon
1 teaspoon salt (optional)

Gorgeous Granola
It’s brilliant fun to toast your own granola. It’s easy to make in big
batches and it keeps for a few weeks in an airtight container. Add different types of nuts and dried fruits until you find your favourite mix.

Makes 12-15 portions
Ask a grown-up to preheat the oven to 160°C, 140°C fan, or gas mark 3.
Mix the oats, coconut, nuts and seeds in a large bowl.
In a smaller bowl, mix together the syrup, sugar, oil, juice, vanilla, cinnamon and salt.
Pour the wet mixture over the oat mixture and stir together so everything is nice and sticky all over, then spread out on baking trays so it is about 2 cm deep.
