The Kitchen
The Renovation Project will create approx. 900 sq. ft. of additional kitchen space on the east side, through an addition designed
to seamlessly mesh with Frank Darling’s original 1911 design.
The existing Kitchen will be entirely gutted; every piece in the reimagined layout will be brand new; all kitchen storage — two
walk-in fridges, a walk-in freezer and large prep area — will now be on the main floor, along with a custom-built kitchen island. A
separate garde manger will be built for appetizers, along with a stand-alone pastry area and new pass area for plating. The back
of house servery will also be modernized.
Collectively, this will enhance the culinary team’s ability to continue meeting Member expectations and innovating the Club’s
menu.
We are not making any changes to the dumb waiter servicing the second floor and in lieu removing the partition wall between
the current kitchen and servery to ease traffic and access to the Garden, Main Dining Room and Bar.
90% of the equipment will be purchased brand new, equipment such as a Rational oven and fridges purchased in the last three
years will be reused. The custom-built cooking island will comprise state-of-the-art equipment including induction cooking.
Additional space and better flow of movement in the kitchen will permit the Club to cater for larger functions whilst not
compromising à la carte dining.
The original service entrance in the Main Dining Room, toward the glass doors, will be reinstated in place of the current three-
door system.
New HVAC, fire suppression and ventilation systems will also be installed.
